Everyone has had a great guacamole dip at a party at least once. Well here is a simple foolproof dip that will please your guests every time.
Depending on your preference this can be made rustic or creamy by combining all the ingredients into a food processor; either way it's very tasty. Below is the rustic version.
In a large bowl mash four to six large ripe, peeled and seeded avocados (save the seeds)
Add to the mashed avocados
1 Cup Sour Cream
1/2 Cup drained chopped green chillies
8 Spring onions chopped small (reserve some of the dark green tops to garnish the bowl)
1 Large Tomato chopped
1 Tab. Lemon Juice (fresh is best)
Kosher Salt to taste
8 Turns of freshly cracked black pepper
1/4 Cup Salsa (use your favorite)
Stir together until well mixed
Add the four seeds press them down into the mixture
Cover with plastic wrap and Chill
Before serving remove seeds and sprinkle the remaining chives on top as a garnish.
