Cranberry Pineapple Salad

This dish is both a refreshing and easy dish to make. It makes a nice presentation on any holiday table.

1 20 oz. can Pineapple chunks drained reserving the juice
1 8 oz. Package of Jell-o Raspberry or Cherry flavors
1 16 oz. can whole cranberry sauce
1 Large delicious apple, slice five very thin slices for the garnish then chop the remainder into small chunks
1/3 cup chopped walnuts

Remove 1 tab. Of the pineapple and dice it for the garnish
In a medium sauce pan combine the reserved pineapple juice with enough water to equal a total of three cups. Heat to boiling.
Add the gelatin and stir for a minimum of 2 minutes until completely dissolved.
Stir in cranberry sauce
Pour the mixture into a large bowl.
Refrigerate for 1 and ½ hours until slightly thickened (should be the consistency of unbeaten egg whites)

Stir in the remaining pineapple, apple and the walnuts. Stir the ingredients in gently
Pour the mixture into a smaller glass serving bowl

Refrigerate for 4 hours. Garnish with the diced pineapple and a few thinly sliced apple slices.
