Tequila Shrimp

Start with the large Tiger Shrimp they are rich and meaty.
(make certain they have been cleaned)
I like leaving the shell on but no heads; it grosses people out!
There big so four per person is usually enough.

Get your grill hot but you don't want the shrimp any where near a flame because they cook so fast. Remember shrimp only take a few minutes to cook you can't walk away from the grill or they will be tough and dry.

If you make your own salsa that's great! If not buy your favorite brand from the market.I suggest you buy two bottles to make certain you have plenty. Pour the entire bottle into a large bowl. Then add two shots of your favorite tequila and mix well. Add the shrimp making sure to submerge all of them. Then cover the bowl and refrigerate for a minimum or 30 minutes up to two hours.

Next you will need an aluminum pan that you can place on the grill. I favor those that can be thrown away after less work for the cook.

Place the pan on one side of the grill to heat the salsa mixture.make scertain to stir with a wooden spoon.
Then using a pair of tongs lay the shrimp directly on the grill for 30 to 45 seconds turning them quickly. Your trying to impart the smokey flavor into the shrimp. Then toss them back into the salsa mixture to finish cooking. Shrimp changes color when it has they are cooked.

I like to serve this ladled over seasoned white rice. It makes a really nice presentation and takes little to no effort or preparation time. It's really great for summer entertaining and pairs well with tasty margarita's or any other tequila concoction you enjoy!
