This will serve 5 to 6 people.
You will need for the meatloaf:
1 and 1/2 lbs. lean ground beef
1/2 cup tomato Katsup
1/3 cup tomato Juice
1/2 Tea. Salt
1/2 Tea. pepper
1/8 Tea. Crushed Red Pepper
2 Eggs beaten
3/4 Cup bread crumbs
1/4 Cup Finely chopped Onion
2 Tea. Mustard (Use a good flavorful mustard)
For the Topping you will need:
1/4 Cup tomato Katsup
1/2 Tea. Prepared Mustard
2 Tea. Brown Sugar
Fresh chopped Cilantro for Garnish
In a large bowl combine Katsup, tomato juice, salt, pepper, crushed red pepper, eggs, bread crumbs onions and mustard. Mix until thoroughly blended.
Add ground Beef mix gently and well
Line a 9x5 inch pan with foil. Press the beef mixture into the pan.
In a separate bowl combine the topping ingredients, mix them well.
Spread topping over the top of the meatloaf.
Bake at 400 degrees F for 35 to 45 minutes or until done.
Drain off the fat allowing meatloaf to rest for 5 minutes before serving.
Top with the fresh cilantro and serve.

Crock Pot - Pot Roast
First I recommend you cook this in a crock pot. It will cook all day and be ready when you get home from work.
1 Beef Roast (the cut of meat dosen't matter. Inexpensive beef cooked all day will be tender) I suggest (a rump roast or a shoulder roast)
3 Potatoes cut into 1" cubes (skin on or off your choice)
3 Carrots peeled and cut into 1" chunks
1 Onion large cut into 1" chunks (any onion white or red your choice)
3 Celery stalks cut into 1" chunks
1 Packer of Aujus
2 Boxes of unsalted beef stock
Salt & Pepper to taste
1 Tablespoon Olive Oil
In a frying pan drizzle olive oil 1 Tablespoon and heat
Salt & Pepper roast on both sides
Place Roast in heated pan and sear on all sides. You're looking for a nice brown crust. This will sear in the juices and make the roast much tastier.
Place the onions in the bottom of the crock pot
Place the roast on top
Add all the remaining vegetables
Mix the packet of Aujus with 3 Cups of water and stir until well combined in a separate bowl. Then add to the crock pot
Add the beef broth until it covers the meat and vegetables.
Set crock pot on high at no later than eight am and dinner will be ready by five pm.
Easy as that. Enjoy!

Gucamole Beef Rolls
20 Slices of deli sliced roast beef
2 Medium Avocado
2 Tab. Sour Cream
1 Tea. Lime Juice
1 Tab. Grated onion
1/2 Tea. Chili Powder
1/4 Tea. Coriander
4 Drops Hot Sauce (to taste)
3 Tab. Chopped Tomatoes (Seeded)
Mash Avocado
Add sour cream mix well
Add lime juice
Stir in all remaining ingredients mix well
Allow 2 Teaspoons for each slice of roast beef.
Spread mixture on slices then roll up slices, wrap in plastic wrap and chill.
Later cut rolls in half or thirds stick with a toothpick.
